Hủ Tiếu is a Southern Vietnamese specialty influenced by Chinese and Cambodian cuisines. It is often served as either a soup (hủ tiếu nước) or dry with broth on the side (hủ tiếu khô), making it a versatile street food dish.

500 g pork bones 200 g pork slices 200 g shrimp (peeled) 150 g squid (cleaned sliced) 8 quail eggs (boiled peeled) 400 g rice noodles 2 cloves garlic (minced) 3 tbsp fish sauce 1 tbsp sugar 2 scallions (chopped) 100 g bean sprouts fresh herbs (chives cilantro)

Make Broth
Simmer pork bones in water 1–1.5h, skim foam.

Fry garlic in oil, add to broth with fish sauce, sugar.
