Bún Bò Nam Bộ, despite its name, is believed to have originated in Hanoi as a Southern-style dish. It is served without broth, combining warm beef with cool noodles and herbs for a refreshing yet hearty meal.

300 g beef sirloin or flank (thinly, sliced) 400 g dried rice vermicelli 100 g bean sprouts 1 cucumber (julienned) 1 small carrot (julienned) 1 cup fresh herbs 2 cloves garlic (minced) 4 tbsp fish sauce 3 tbsp sugar juice of 2 limes 3 tbsp roasted peanuts (crushed) 2 tbsp fried shallots 2 tbsp oil chili as desired

Cook Vermicelli
Boil rice vermicelli until soft, rinse and drain.

Make Dressing
Mix fish sauce, sugar, lime juice, minced garlic, and chili until dissolved.

Heat oil, stir-fry beef slices with garlic quickly, avoid overcooking.
