Gỏi Cuốn is a popular Vietnamese snack and appetizer, especially in the South. Known for its freshness, it combines cooked proteins with crunchy vegetables and herbs, wrapped in soft rice paper and dipped in a flavorful sauce.

12 rice paper sheets 200 g shrimp (peeled deveined) 200 g pork belly 100 g dried rice vermicelli 1 small cucumber (julienned) 1 cup lettuce leaves 1 cup fresh herbs (mint basil cilantro) 3 tbsp peanut butter 3 tbsp hoisin sauce 1 clove garlic (minced) 1–2 chilies (sliced) water as needed

Cook Pork
Boil pork belly until tender, slice thin.

Boil shrimp until pink, halve lengthwise.
