Mì Quảng is a signature dish of Quang Nam and Da Nang, known for its minimal broth, bold flavors, and colorful presentation. Traditionally served during family gatherings and festivals, it reflects the central region’s resourceful cooking style.

400 g turmeric noodles 200 g pork (sliced) 200 g shrimp (peeled) 200 g chicken (sliced) 4–6 quail eggs (boiled) 1 tbsp turmeric powder 2 tbsp fish sauce 2 cloves garlic (minced) 2 shallots (minced) 500 ml pork or chicken stock fresh herbs (basil, mint, cilantro) 50 g roasted peanuts 2–3 sesame rice crackers

Stir-fry Proteins
Sauté garlic, shallots in oil, add turmeric, pork, shrimp, chicken.

Add stock, fish sauce, simmer 10–15 minutes.

Boil quail eggs, peel.

Boil mì quảng noodles, drain.
