Thịt Kho Trứng (also called Thịt Kho Tàu) is a classic Southern Vietnamese comfort food, often served during Tết (Lunar New Year). The slow braising process infuses the pork and eggs with a rich, savory-sweet flavor, best enjoyed with steamed rice.

800 g pork belly (cut into chunks) 6 hard-boiled eggs (peeled) 3 cloves garlic (minced) 2 shallots (minced) 3 tbsp fish sauce 3 tbsp sugar 500 ml coconut water 1/2 tsp pepper 1–2 fresh chilies (optional)

Make Caramel

Heat sugar until golden, stir in garlic and shallots.
